Shrimp Quesadillas PDF Print E-mail

Servings:  2-4

Shrimp
Butter
6-8 flour tortillas
Monterey, jack or goat cheese, a combination of all or your favorite cheese
Chipotle sauce from Café Noche or store.  (If you cannot find sauce already made up, you can get chipotle peppers in other sauces. Simply chop the chipotle peppers before serving)
Chopped green chilies (canned)
Salsa

1.  Grate the cheese.

2.  Sauté shrimp in butter.
Add salsa and chipotle sauce.

3.  Place a tortilla or two on the grill and cover with grated cheese, sprinkle with chopped chilies and add the shrimp liberally to half the tortilla.

4.  Fold it in half, flipping as needed.  Continue to heat until tortilla is golden and cheese is melted.

5.  Once cooked, place to the side of the grill or place in warm oven and
continue to make more, up to 3 per person. 

6.  Place up to 3 quesadillas on a plate, overlapping each other and top with fresh salsa. 

Sides of guacamole, beans and rice, and a great margarita complete the dish.
